Oyabun Santoku

The blade for this Santoku style chef's knife has a core of 26C3 which is a very pure high carbon tool steel. It is capable of taking and holding a very fine and sharp edge. The blade has been laminated with mild steel and pure nickel which has then been treated to a long coffee etch which turns the 26C3 core black, makes the pure nickel really pop and produces that dark subdued look on the outer cheeks. The blade is 170mm long, 3mm thick on the spine, 45mm deep at the heel with an overall length of 300mm. The handle scales are made from black dyed and stabilised Norwegian oak with red liners and are held in place with two stainless Corby bolts. The handle ergonomics have been designed to give the user maximum grip control and comfort while using this knife and the stabilised wood will resist moisture ingress prolonging the life of your beautiful handle.
